研究概要
(日本語)
小麦や大豆などの植物性食品タンパク質について、水和状態におけるタンパク質のナノ凝集構造を中性子やX線の小角散乱を利用して解析するとともに、食品物性との関連を解明するための研究を進めている

The aim of my study is focused on the investigation of the nano-scale structure for hydrated assembly of plant food proteins by utilizing small-angle X-ray and neutron scattering techniques.
