亜臨界水を用いた食品加工残渣の有効利用、脂質の酸化過程の解析、有機溶媒中での酵素反応、イオン液体中での糖類の変換反応、蓄熱マイクロカプセルの作製
Overview of your research
(Japanese)
食品加工残渣を水と混合し、高温で加熱する(亜臨界状態にする)ことで機能性物質を効率よく抽出する手法について研究している。並行して、亜臨界水中での糖やペプチドなどの分解過程についても検討中である。また、種々の状態の油脂の酸化過程を速度論的に解析している。さらに、リパーゼを用いて脂肪酸エステルを合成し、その性質を評価する研究も行っている。最近、イオン液体中での糖からHMFへの変換反応や蓄熱マイクロカプセルの調製法についても検討を始めた。
