海洋生物由来の食品を中心として、食品成分のヒトへの健康増進機能を研究している。論文作成で研究を終了するのではなく、実用までを視野に入れた研究を行っている。教育に関しては、話題提供より、専門分野を学ぶ際の基盤となる基礎的な知識を教授することを重視している。また大学院野学生に対しては、初期には論文の作成等を細かく指導し、将来独り立ちできるように考えている。他の研究期間、企業との共同研究も積極的に進めている。高大連携にも積極的に関わっている。

I am conducting researches on health-promoting activity of marine-derived foods. Final goal of the research is to produce health benefit foods. For education, rather than providing topics, I have intended to provide basic knowledge to understand biological functions. For graduate students, one of my important goals is providing skill of preparing article. I am conducting joint researches with other academia and industrial partners. I am also willing to participate cooperation program with high school.

海洋生物を中心とした食材中のペプチドの生体への吸収、代謝、機能を研究している。ペプチドはゼラチン等の酵素分解物の他、発酵食品に含まれるあみの末端のグルタミン残基が環化したピログルタミルペプチドを対象としている。これらのペプチドの一部はヒト末梢血に吸収されることを見いだした。またコラーゲンペプチドの線維芽細胞への増殖促進機能、発酵食品中のピログルタミルペプチドの抗炎症作用をIn vivoおよびvitroで見いだしている。

Metabolic fate and biological functions of peptide in food mainly from marine source have been examined. Peptides in fish gelatin hydrolysate and Japanese traditional fermented foods are used.It has been elucidated that Pro-Hyp, metabolite of gelatin hydrolysate, is absorbed into human blood and enhance growth of fibroblast and that some pyroglutamyl peptides in fermented foods, such as pyroGlu-Leu also can be absorbed and exert in vitro and in vivo antimicrobial activities.
