1953年京都市に出生、丹後宮津にて育つ。1983年京都大学大学院農学研究科食品工学専攻博士課程修了後、京都大学農学部助手、フランス科学研究機構生化学研究所研究員、京都大学農学部助教授を経て、2004年から京都大学大学院農学研究科教授。専門分野:食品機能学、栄養生理・生化学、脂質代謝と肥満の制御科学、健康機能性成分に関する植物分子デザイン、香辛料の健康機能学 社会活動:NPO法人近畿アグリハイテク理事、日本肥満学会理事など。自己紹介(200字程度)

健康の維持や病気の予防・改善に役立つ「食品の働き」を、体のなかの遺伝子やタンパク質の働きと関連づけて系統的、論理的に研究する新しい学問領域として、ヒトや実験動物の遺伝子情報を活用し、細胞内のみならず細胞間、臓器間など生体内情報伝達・制御機構に関わる「食品成分」の役割・機能を最新の実験技術を用いて「分子のレベル」で研究しています。そのような新しい研究方法を取り入れて、健康科学の視点から食品研究の発展に寄与することを目的としています。
