京都大学食糧科学研究所では、動物細胞の生体膜リン脂質の脂肪酸側鎖と生理機能との関係を研究した。その過程で、動物細胞の小胞体でのタンパク質の構造形成と品質管理に作用するER-60を発見した。食糧科学研究所から農学研究科に移行後は、人類が利用している主要な植物性タンパク質である種子貯蔵タンパク質の食品加工特性と構造との関係および小胞体での種子貯蔵タンパク質の構造形成機構と品質管理に焦点をあてた研究を行ってきた。現在はER-60を初めとするタンパク質の機能を構造ダイナミクスの観点から理解することを目指し、複合原子力科学研究所にて量子線小角散乱等の物理的手法と分子生物学及び生化学的手法を融合した学際的な研究を推進している。

植物性食品タンパク質の改変による、高品質化タンパク質の開発をおこなうための基礎研究を行っている。タンパク質含量がきわめて高いダイズおよび特異な食品加工特性を有するコムギに着目し、小胞体での種子貯蔵タンパク質の構造形成、品質管理、集積の分子機構の解明に取り組んでいる。また、コムギタンパク質やダイズタンパク質の構造と、これらのタンパク質がもつ食品加工特性および生理機能性との関係を研究している。また、動物細胞小胞体における糖タンパク質のフォールディング酵素ER-60の機能を、構造ダイナミクスの観点から理解することを目指して、量子線小角散乱等の物理的手法と分子生物学及び生化学的手法を融合した学際的な研究を推進している。
